L'Shana Tova! Happy New Year & Honey Cake!
This recipe survived the Holocaust in my grandmother's head! It is traditional and delicious!
Preheat oven to 350F degrees
Ingredients:
3 cu flour
2 spoonfuls baking powder
1tsp baking soda
2 tsp cinnamon
1/4 tsp nutmeg
1 tsp salt
1 orange grated (yes, the whole thing-- more or less, no seeds!)
1 cu sugar
1 cu honey
4 eggs
1/2 cu orange juice (or water)
1 1/4 cu veg. oil
2 tsp cocoa or coffee (I used a little of both!)
You may also add: raisins, dates, 2 cups of shredded carrots, anything!
Slowly add dry mixture to wet. Blend well.
I use a heart shaped bundt pan - greased, but if you are using a circular pan, cut a doughnut shape out of wax paper to completely line the bottom.
Bake 55 minutes. Cool completely, and release from pan. Enjoy!
